Yield: 40-50 Crackers

 

Ingredients:

 

  • 2-1/2 cups all-purpose flour, plus more for rolling dough
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon kosher or sea salt
  • 3 tablespoons cold unsalted butter, cut into small cubes
  • 1 cup whole milk
  • Coarse kosher or sea salt

Instructions:

 

Step 1: Preheat your oven to 375°F (190°C) and line two baking sheets with parchment paper.

 

Step 2: In a large bowl, combine:

 

2-1/2 cups all-purpose flour

1/2 teaspoon baking soda

1/2 teaspoon kosher or sea salt

Step 3: Add the cold unsalted butter (cut into small cubes) to the dry ingredients in the bowl. Use your fingers to work the butter into the mixture until it resembles coarse meal.

 

Step 4: Gradually pour in 1 cup of whole milk and gently mix the dough. Then, knead it until it just comes together and becomes tacky but not sticky. If needed, add more flour. Wrap the dough in plastic wrap and refrigerate it for an hour.

 

Step 5: Take the dough out of the refrigerator and place it on a floured surface. Divide it in half, returning one half to the refrigerator. Roll out the other half until it’s about 1/8 inch thick. Sprinkle more flour on the dough as necessary to prevent sticking.

 

Step 6: Use a pizza cutter to cut the rolled-out dough into 2-inch squares.

 

Step 7: Transfer the squares onto the prepared baking sheets, leaving about an inch of space between each square. Sprinkle the squares with coarse sea salt and prick each one all over with a fork.

 

Step 8: Bake the crackers in the preheated oven until they turn golden brown and become crisp, which should take around 15 minutes, depending on their size.

 

Step 9: Repeat the same process with the second half of the dough.
